$10 Dinners: Chicken Quesadillas

Welcome to the second installment of Humble Chef’s “$10 Dinners” series, where we try to make a meal for a family of 4 for $10 or less.

These recipes have been tested right here in the Humble Chef kitchen and were taste-tested and Mayor-approved!

Last time, we made Buffalo Chicken Burritos, one of Humble Timothy’s favorite meals, but today on the menu, is one of my favorites, Chicken Quesdillas.

This recipe, which is one stolen from Humble Mom’s recipe book, is easy and delicious. We’ve been making them for years and they turn out amazing every time! Hope you enjoy them!

Ingredients

  • 1 lb. chicken breasts…………………………………… $2.99/lb
  • 6 large flour tortillas………………………………….. $1.50
  • 4 0z cream cheese……………………………………… $.50
  • 1/4 cup queso dip………………………………………. $.50
  • 1 package of fajita seasoning……………………….. $.99
  • 2 cups shredded cheddar cheese…………………..$2.50

Total: $8.98

Tip:  I like to serve my quesadillas with salsa and sour cream.

Directions

1.  Cut chicken into small, thin slices. Place chicken in a frying pan over medium heat.

2.  Add in the fajita seasoning to the chicken while still cooking. Once the chicken is cooked, lower the heat and add the cream cheese and queso dip into the pan.

3.  Once the cream cheese and queso dip are thoroughly mixed in, add the shredded cheese and stir until it’s all melted.

4.  Spread the chicken and cheese mixture evenly on one half of a tortilla. Then fold the other half of the tortilla on top, creating a half circle.

5.  Finally, place the Quesdadilla on a grill, panini maker, Quesadilla maker, or a frying pan and cook the for a two minutes to create a crust on the tortilla.

6.  Once you have a nice crust on your Quesadilla, let it cool for a few minutes and then cut it into thirds and serve with salsa and sour cream.

Makes 6 Quesadillas.
