$10 Dinners: Buffalo Chicken Burritos

As you know, my goal is to save you money.  That’s why I’m happy to introduce to you “$10 Dinners,” a new series brought to you by Humble Chef!

I can assure you that all of these recipes were created right here in the Humble Chef kitchen and were taste-tested and Mayor-approved!

Buffalo Chicken Burritos

Many of you may be unaware of this fact, but buffalo chicken wings are actually Humble Timothy’s favorite food.  So keeping this fact in mind,  I was surprised to see the words “Buffalo Chicken” as I passed by a rice display while grocery shopping.

Buffalo chicken flavored rice?  That’s certainly not a meal by itself, but it definitely sounded like something I could work with!  After picking up the rice, along with a few other items, I conjured up a meal that Humble Timothy now claims as his favorite.  Take that chicken wings!

Ingredients:

  • 1 lb. chicken breasts……………………………………………………. $1.99/lb
  • 1 teaspoon “Buffalo Rub” by Pampered Chef……………… ~$.33
  • 1 package of “Buffalo Chicken” by Knorr Rice Sides…….. $.79
  • 1 package of flour tortillas………………………………………….. $1.99
  • 2 cups of shredded cheddar cheese……………………………… $2.00
  • 2 cups of Blazin’ Buffalo Doritos Approx. 25 chips…….. ~$1.00
  • 1 14oz container of sour cream…………………………………… $.99
  • 1/4 cup buffalo sauce………………………………………………. ~$.41
  • Lettuce and tomato if desired

Total: $9.50

Tip:  Try using fast food buffalo sauce cups instead of store-bought sauce.

Directions:

1.  Cut chicken into small pieces and toss in the Buffalo Rub.  Then place seasoned chicken into a hot skillet with a little bit of olive oil and cook on medium until the chicken is completely cooked. Set Aside.

2.  In a medium saucepan, prepare the “Buffalo Chicken” rice as directed on the back of the package.  When rice is tender and sauce is absorbed, stir in the cooked chicken.

3.  Place a tortilla flat on a plate. Scoop 1/2 – 3/4 cup of the buffalo rice onto the tortilla.  Make it into a log shape in the middle of the tortilla.

4.  Sprinkle cheddar cheese evenly on top of the buffalo rice, as well as the desired amounts of sour cream, lettuce, and tomato.

5.  With your hand, grab about 5 chips and crumble them over the burrito.

6.  For a final burst of heat, pour about 1 tablespoon of buffalo sauce over the entire burrito.  You can add more if you want your burrito hotter, as in the case for Humble Timothy.

7.  Lastly, it’s time to roll your burrito.  If it looks like your burrito is too big to roll, try watching this video on how to roll a burrito in aluminum foil.  It’s pretty and less messy!
